apple sauce is a fun little drink. it's a semillon, sauvignon blanc that is picked early to retain malic acid in the wine.
malic acid is the crunchy acid that people associate with granny smith apples. so, these early picks often have a green apple note. we stop the ferment early, making it sweet, then carbonate it in a pressure vessel.
the end result is a wine that is sweet but fresh. it has drinkability. it's low alcohol, so it doesn't put up much of a fight. it's a good one for when a few friends come round.
